Among this season’s standouts is Emerald, one of the newest additions to California’s fresh fig crop. Similar in appearance and flavor to the beloved Calimyrna fig, Emerald has smooth yellow-green skin, a golden-hued interior and a delicately sweet flavor with subtle honey notes.
